Benoît Marguet (Champagne Marguet)

Benoît is a 5th generation grower & maker. He farms 8 hectares of Pinot Noir (58%) and Chardonnay (42%) in two Grands Crus villages: Ambonnay et Bouzy. He farms biodynamically, uses aromatherapy and has worked extensively with Claude & Lydia Bourguignon (who you can hear speak in person at Alive! - check out 'Stories from the field: Chile'). Unusually for Champagne, Benoît uses indigenous yeasts and very low levels of added sulfites. In fact, his sulfite totals never exceed 25 mg/L.
